Something good is happening to the Israeli culinary scene. Although it’s still true that the center is still in Tel Aviv, but like every other western country, you can find culinary gems in the periphery and one of them is the Yoav Dekelbaum’s pastry shop, located in the green fields of Emek Heffer.
The shop is gorgeous with handmade confectionery like breakfast pastries such as; croissant, brioche and danish, savory pastries such as parmesan stick and various sponge cakes. The place even serves coffee, but the reading material is cooking books and not the morning papers.
The highlight of the shop is the magnificent vitrine which displays sweet petits fours intended for hosting and events and colorful macaroons. The prices are especially reasonable for those of us who are used to Tel Aviv pricings. All the products are kosher.
Yoav started his professional fourteen years ago after leaving the acting world and retraining. Yoav was a theater and film actor and always looking for more venues to make a living. He found himself baking at “Lechem Erez” where his romance with baking started. Later he found himself working with chef Paul Assenheim. Assenheim fell in love with Yoav special desserts and chose him to be the pastry chef for his catering business.
Yoav interned at La Notre in France, open a confectionary kitchen in Kefar Netter and started making desserts for the upper crust, including private events, large or small scale in Europe, especially in Switzerland and London, to which he is flown to.
Yoav’s creativity and meticulous touch is evident in each dessert. He travels each year for internships and lately came back from interning in Spain at one of the world’s best pastry chefs – Paco Torreblanca.
