The Dok – A new bar and restaurant by brothers Asaf and Yotam Doktor is the young sibling & neighbor of their well known restaurant – “The brothers” located on Ibn Gvirol street in Tel Aviv.
In this new small and intimate space, which operates both as a kitchen and a workshopth, the brothers were looking to create a happy and intimate dinner atmosphere where their guests can enjoy a variety of dishes that are fairly priced. Chef Asaf Doktor serves a direct artisanal culinary experience of fresh & creative cuisine alongside a variety of local wine, alcohol and artisanal brewers.
Choosing to open such a personal place like “The Dok” has everything to do with the growth and professional development of chef Asaf Doktor. He says: “In recent years since opening “The brothers” I found myself working more and more with raw materials and the roots of Israeli cuisine. The results are served there today, but we wanted a smaller space where you could have a deeper and intimate experience”.
The interpretation given at “The Dok” to local contemporary cuisine, is based on the understanding that in order to create a modern culinary language, one must first return to the roots, understand, research and control the source of the dish, taking into consideration that there is a path to make from raw material to plating.
Doktor researched authentic local cooking methods (using fire and coal, brewing, preserving, pickling, fermenting and more) and collected raw materials like wild herbs, local small fish, fruits, vegetables and olive oil. He also teamed with carefully selected small growers and manufacturers that use “old” techniques. The result: a menu that is comprised of fresh, creative and seasonal dishes that are based on unconventional local material carefully handmade and processed.
